The venture will extract plant-based protein from out grade potatoes and peeling waste, as part of a first-of-its-kind sustainable initiative, which will improve profits and reduce tuber waste before it even hits the shelves
The aim for Root Extracts Ltd is to commercialize the technology into a variety of territories utilizing their potatoes. It’s about taking low-value raw material that’s processed in the same location and keeping it within the local food chain and retailers. “By extracting protein from potatoes grown in the UK, we are creating a natural plant-based protein product, which is both produced and manufactured in the UK. This effectively reduces food miles and carbon footprints and increases food utilization says Root Extracts’ Managing Director, Vidyanath (Vee) Gururajan.
