As the demand for convenient and ready-to-use food products continues to grow, potato flakes are emerging as an important value-added product within the potato industry. Produced by cooking, mashing, and dehydrating potatoes into thin flakes, they are widely used in the manufacture of instant mashed potatoes, bakery products, snacks, soups, and other processed foods. Their long shelf life, ease of storage, and versatility make them attractive to both consumers and food processors.

For Kenya’s potato sector, potato flakes present an opportunity to reduce post-harvest losses while creating additional markets for farmers. During periods of high production, potatoes that may otherwise face market challenges can be channeled into processing, helping to stabilize demand and improve returns along the value chain. Increased investment in potato processing can also contribute to job creation, stimulate industrial growth, and strengthen the competitiveness of locally produced potato products.

As the country continues to promote value addition in agriculture, potato flakes demonstrate how innovation can transform a traditional crop into a wide range of marketable products.
