Potato is used both at household for direct consumption and at industrial level in food processing for value addition. At both the two levels of potato consumption, the potato peels generated are considered as a waste and therefore disposed of which is contrary to the recent research studies that suggests that potato peel is an important source of bioactive compounds which can be used to produce value added products.
The peels can be used as a source of dietary fibre whereas the fermented peels can be used as a starch adsorbent and also in producing packaging materials. The peels can also be used in energy production and corrosion inhibition. Therefore, the bio refinery approach for potato peel has got the potential of increasing the number of value added products obtained from the peels therefore reducing waste generation.
