In the potato goodness corner, we shall look at how to prepare Potato Pancakes


  • 4 cups cold mash potatoes
  • 5 slices of bacon
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs well beaten
  • 1/2 cup shredded cheddar cheese


  1. Place the bacon in a large, deep frying pan, and cook over medium-high heat, turning occasionally, until evenly browned and crisp about 10 minutes.
  2. Remove the bacon slices, crumble, set aside and leave the bacon drippings in the frying pan.
  3. Mix mashed potatoes, eggs, onion powder, salt, and black pepper in a bowl;
  4. Stir in the crumbled bacon and Cheddar cheese.
  5. Form the mixture into 8 patties.
  6. Heat the bacon drippings over medium heat, and pan-fry the patties in the drippings until crispy on each side, about 4 minutes per side
  7. Remove from the pan and serve while still hot.
