 Here, we shall look at how to prepare delicious Potato Croquettes


  • 1 cup Blue Band
  • 3 potatoes boiled and mashed
  • 2 tablespoon fresh parsley chopped
  • 3/4 cup mozzarella block shredded
  • 1 egg
  • 1 cup breadcrumbs
  • salt to taste
  • pepper to taste


  1. In a large bowl add the mashed potatoes, the parsley, salt, pepper and mozzarella cheese and mix well.
  2. Beat the egg and pour the yolk in the mixture and mix well until evenly distributed.
  3. Trim the end of a piping bag and put the whole mixture inside.
  4. Spread a cling film on a tray and squeeze out the mixture through the trimmed end such that it forms long round rolls.
  5. Refrigerate the strips for 30 minutes, afterwards trim the ends and  cut into buttons.
  6. Mix wheat flour with bread crumbs and add the egg white. Coat the buttons with mixed flour and dip in the egg whites. 
  7. In a frying pan, melt Blue Band margarine and bring to cooking temperature. Dip them and fry until golden brown. Place them on absorbent paper towel to drain excess butter.
