Here, we shall look at how to prepare delicious Potato Croquettes
Ingredients
- 1 cup Blue Band
- 3 potatoes boiled and mashed
- 2 tablespoon fresh parsley chopped
- 3/4 cup mozzarella block shredded
- 1 egg
- 1 cup breadcrumbs
- salt to taste
- pepper to taste
Instructions
- In a large bowl add the mashed potatoes, the parsley, salt, pepper and mozzarella cheese and mix well.
- Beat the egg and pour the yolk in the mixture and mix well until evenly distributed.
- Trim the end of a piping bag and put the whole mixture inside.
- Spread a cling film on a tray and squeeze out the mixture through the trimmed end such that it forms long round rolls.
- Refrigerate the strips for 30 minutes, afterwards trim the ends and cut into buttons.
- Mix wheat flour with bread crumbs and add the egg white. Coat the buttons with mixed flour and dip in the egg whites.
- In a frying pan, melt Blue Band margarine and bring to cooking temperature. Dip them and fry until golden brown. Place them on absorbent paper towel to drain excess butter.
